Costa Taco Leads Burleigh's Revival with New Highway Venue

The Gold Coast's cult-favourite Mexican eatery, Costa Taco, is set to open a landmark venue on the Burleigh Highway. Discover authentic street food and famous quesabirria this October/November

Get Ready, after years of construction and disruption, Burleigh is on the cusp of a major revival, with Costa Taco Burleigh set to lead the way. 

The Stanley brothers, Nick and Matt, are setting up shop, positioning one of their biggest venues yet, front and centre on the Gold Coast Highway. Located at 1718 Gold Coast Highway, Burleigh, the venue is scheduled to open its doors in early November.

The opening of this new venue marks the beginning of a renewal in Burleigh, offering a place where the community can reconnect, eat well, and rediscover the vibrancy the suburb is renowned for. With the $1.2 billion Stage 3 Gold Coast Light Rail extension nearing completion, the once-chaotic stretch is beginning to clear, and Costa Taco is perfectly placed to meet this moment.

The Burleigh store marks a new chapter for the Costa Taco. While the Stanley brothers first built their loyal following at their beloved Palm Beach venue, that location recently closed to make way for future development. However, rather than stepping back, they saw the closure as the perfect chance to grow, finding that Burleigh offered the necessary scale, visibility, and energy to take their mission further.

Costa Taco isn’t best described as a restaurant, but rather a community. Co-Founder Nick Stanley notes that the brand has always been about more than food; it’s about sharing Mexican culture with honesty and heart, and creating a space where everyone feels welcome. Their restaurants embody the relaxed coastal lifestyle of the Gold Coast while simultaneously honouring Mexican culinary tradition.

This community-first ethos, combined with consistently incredible flavour, has cemented Costa Taco as a true cult favourite on the Coast. The existing venues, including their location in Broadbeach on Armrick Avenue, is packed night after night with a loyal crowd.

When you walk through the doors, you can expect fresh authentic street-style dishes. Must-try items include authentic street-style tacos, such as Beef Birria and Baja Crispy Fish, alongside favourites like Ceviche Tostadas and Elote Street Corn.

But if there’s one dish that has become a phenomenon, it’s the quesabirria. This cult favourite is a delicious fusion of melted queso and slow-cooked birria—the traditional Mexico stew—a dish that keeps people returning again and again.
