Brisbane is about to get a whole lot sweeter. From 11–13 April 2025, the International Cake Show Australia returns to the Brisbane Convention & Exhibition Centre, bringing with it a whirlwind of sugar, creativity, and star-studded flair that’s guaranteed to leave you frosted with excitement.
Across three jam-packed days, Exhibition Hall 2 at South Bank will be transformed into a colourful wonderland of edible art, unmissable entertainment, and hands-on experiences for cake lovers of every age and skill level. With more than 100 free demonstrations, pop-up shops, workshops, celebrity chef appearances and jaw-dropping sugar sculptures, it’s the ultimate celebration of all things cake, cookie and creativity.
Big Cakes, Big Names, Big Fun
One of the show’s headline acts is the epic Battle of the Sugar Giants—a clash of creativity featuring six world-class sugar artists. These edible installations are no small feat, spanning 3m x 3m and made entirely from cake, ganache, modelling chocolate and fondant. Expect to marvel at creations like a Legoland with a Marvel twist, an Enchanted Forest, a whimsical Alice in Wonderland setting, an all-aboard character train, a dreamy Woodlands theme, and a giant rubber duck in a tub.
The show isn’t just about watching the pros. There are hands-on workshops and mini classes designed to suit all experience levels. Whether you’re a beginner eager to try your hand at fondant or a seasoned baker looking to refine your skills, there’s something for everyone. Most activities are free with entry (excluding paid classes), and children under 12 get in for free—making it a perfect outing for the whole family.
Stars of the Sugar Scene
This year’s judging panel for the prestigious Wedding Cake Designer of the Year includes top-tier talent from around the world. Judges include Angela Morrison from Cakes by Angela Morrison (USA), Marc Suarez from Marc Suarez Luxury Cakes (France), Susanti Sunardje from LeNovelle Cake (Indonesia), Dominique Pickering from Polly Pickering Cakes (UK), Aimee Ford (Isle of Man), Zoe Clark from Zoe Clark Cakes (Sunshine Coast), and Nikki Ernst from Queensland Brides.
Back to host for her third year is internationally famed extreme-caker and UK TV personality, Rose Dummer—best known for creating a life-sized Paddington Bear cake for Queen Elizabeth II. On Sunday, Rose will show audiences how she crafted the edible fine China cup and saucer she made for the Queen. 👑👑👑
Adding even more sparkle to the program is The Great Australian Bake Off celebrity baker Melisa Chilimanzi, who’ll lead the Make & Take 1 Hour Mini Classes. Participants will get hands-on as they level, roll, cut, fondant and stencil six cupcakes to perfection—and take home their sweet masterpieces.
From All Over the World to South Bank
This year’s show is truly international, drawing entrants and judges from the UK, USA, South Africa, Spain, France, Indonesia, Italy, and all over Australia—including Queensland, New South Wales, Victoria, South Australia and Western Australia. Some are full-time professionals, while others balance their cake passion with careers in teaching, construction, music, retail, science (yes, a plant tissue culture technician is competing!), and even pastry cheffing—like the Brisbane-based dad of five who’s one of the country’s leading decorators.
