After the recent opening of Cali Beach, the $10 million dollar rooftop entertainment precinct has teased that their signature restaurant would be something worth the wait.
Their signature restaurant Saké Sisters is now open, with internationally renowned Chef Marcelino Papio Jr at the helm.
“Given the importance of this restaurant, we held an international recruitment campaign to secure a top-notch, qualified and respected Chef. We are so pleased that Marcelino Papio Jr. will be the Executive Chef for Saké Sisters. I have dined in Zuma in Dubai, Toko and Nobu and we are so excited to have chef of that calibre and experience with us at Cali Beach. Get ready for some exciting and exceptional cuisine at Saké Sisters!” said Matthew Keegan, Managing Partner, Artesian Hospitality.
Saké Sisters is a place to be seen boasting unobstructed ocean views and promises to take diners on a culinary journey that begins with light options, including spicy edamame, wagyu, and cheese gyoza and freshly shucked oysters with yuzu caviar and ponzu.
The raw bar, which is made in front of your eyes in an open kitchen, features an array of Sashimi, including Atlantic salmon, bluefin tuna, Western Australian scampi, Hiromasa kingfish and scallops. Saké Sisters also has a twist on raw dishes with a salmon ceviche, wagyu carpaccio, and kingfish uzusukuri all on offer, along with a selection of sushi rolls.
The grill at Saké Sisters is also set to make your mouth water with Japanese sweet corn, yakitori chicken and wagyu beef black onyx skewers. For something more substantial, diners can enjoy a Kingfish collar with grilled pineapple soaked in Sake sauce and teriyaki sauce, free-range spatchcock, pork cutlet or one that is certain to become a favourite, a high-grade wagyu striploin served with pickled red radish, miso butter and chilli miso. Tempura lovers are alrgotten with vegetables, king prawns and Moreton Bay Bugs all on the menu too.
“I am excited to draw on all my experience to create this very special hand-crafted menu for Sake Sisters.
I have utilised Japanese umami flavours, combined with the absolute best fresh produce Queensland and Australia has to offer. The result is a modern Japanese menu that’s uniquely suited to the beautiful beachside location and stunning ocean views. I can’t wait for guests to taste the menu, with my personal favourite dishes being the kingfish usuzukuri and the free range Spatchcock cooked in a signature seven spiced marinade.” said Marcelino Papio Jr. Executive Chef, Saké Sisters.
In addition to an impressive food menu, the Saké Sisters cocktail menu also incorporates classic Japanese flavours with a wide range of saké, umeshu, Japanese Whisky, yuzu and togarashi in an innovative way designed to complement the dining experience.
