The vibrant flavours of Thailand are taking centre stage at Citrique, JW Marriott Gold Coast Resort & Spa, as the acclaimed Chef Spotlight series returns for its second instalment. From now until July 31, 2025, diners are invited to experience the bold, aromatic cuisine of guest chef Anukool “Aony” Poolpipat from Bangkok Marriott Marquis Queen’s Park.

Currently the Senior Sous Chef at The Siam Tea Room at Asiatique the Riverfront, Bangkok, Chef Aony brings more than just flavour to the table—he delivers a story rich with heritage, heart, and a deep respect for tradition. Raised on a small organic farm in Thailand and inspired by his mother and grandmother’s home cooking, Chef Aony draws on recipes passed down through generations. His dishes offer an authentic taste of Thailand, elevated with a modern twist.

“I grew up surrounded by fresh herbs, homemade pastes, and the aroma of my family’s cooking,” Chef Aony shares. “Every dish we create has a story, and it’s this connection between heritage and flavour that I want guests at Citrique to experience.”

Teaming up with Citrique’s award-winning team and JW Marriott Gold Coast’s Executive Chef Paul Smart, Chef Aony has curated a menu that captures the soul of Thai cuisine. The showcase unfolds in two parts: Citrique’s signature weekend Seafood & Grill buffet and a specially crafted à la carte weekday menu, both imbued with rich Thai influences.

Thai Flavours Meet the Sea

Weekend guests can enjoy Citrique’s indulgent buffet, which will feature an array of Thai dishes alongside the usual fresh seafood and grilled favourites. From the lively live Pad Thai station—offering sea prawn, chicken or seafood variations—to roasted duck red currygreen beef curry, and Khao Soi with crispy soft-shell crab, every plate promises a layered, aromatic experience.

Other highlights include Thai Isan minced pork saladgreen papaya salad with grilled chickenslow-cooked pork ribs, and grilled whole fish served with spicy dipping sauces. Traditional Thai desserts, such as mango sticky ricebaked coconut custard with golden beans, and pandan custard with toasted bread, complete the experience on a sweet, satisfying note.

For those looking to raise a glass, Thai-inspired cocktails like a lemongrass margarita—crafted with homemade lemongrass and pandan syrup—are the perfect pairing.

À La Carte Delights During the Week

From Monday to Thursday, guests can savour a carefully curated selection of Thai dishes from the à la carte menu. Signature offerings include Pad Thai Goong with grilled jumbo sea prawnsRed Snapper Curry with eggplant and coconut foam served with jasmine rice, and a fragrant Lamb Shank Massaman slow-braised with almonds and baby onions.

To complement the experience, Chapter & Verse Lounge and Bar is also serving Thai-inspired street food, including lemongrass chicken skewers and juicy prawn cakes, available all day.

A Series That Celebrates Culinary Culture

The Chef Spotlight series launched in March with My Sri Lanka Spice Trail by Chef Peter Kuruvita and continues its mission of showcasing multicultural flavours and talented chefs from within the Marriott network.

“This series is about more than just food—it’s about storytelling, culture, and connection,” says Chef Paul Smart. “With Chef Aony’s dishes, we’re inviting our guests to travel through Thailand one bite at a time.”

The Seafood & Grill Buffet runs every Friday and Saturday evening from 5:30pm, and on Sundays from 12pm with live entertainment and flowing mimosas. Pricing is set at $99 per adult and $49 per child (aged 5–12 years). Weekday à la carte dining is available Monday to Thursday from 6:00pm.
